  • 4 tablespoons unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, 1 teaspoon cinnamon, salt, and 1/2 cup granulated sugar.
  3. In a separate medium bowl, whisk together the 1/2 cup melted butter, egg, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. In a small bowl, prepare the cinnamon sugar topping by mixing the brown sugar, 2 tablespoons granulated sugar, and 1 teaspoon cinnamon.
  6. In another small bowl, melt the 4 tablespoons of butter for the topping.
  7. Fill each muffin cup about two-thirds full with batter.
  8. Brush the tops of the batter lightly with some of the melted topping butter.
  9. Sprinkle a generous amount of the cinnamon sugar topping mixture over each muffin top.
  10. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
