  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/2 teaspoon ground cinnamon
  • 1 (8 ounce) can refrigerated cinnamon roll dough (56 rolls)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1 teaspoon honey (for glaze)

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Lightly grease a 7-inch springform pan.
  2. In a medium bowl, beat the softened cream cheese and granulated sugar until smooth.
  3. Beat in the egg, vanilla extract, and sour cream until just combined. Do not overmix.
  4. Stir in the 1/2 teaspoon of ground cinnamon into the cheesecake batter.
  5. Cut four of the refrigerated cinnamon rolls into quarters. Set the remaining rolls aside for the topping.
  6. Press the cheesecake batter evenly into the bottom of the prepared springform pan.
  7. Arrange the quartered cinnamon roll pieces randomly over the cheesecake batter.
  8. Bake for 35 to 40 minutes, or until the edges are set and the center has a slight jiggle.
  9. Remove the cheesecake from the oven and let it cool on a wire rack for 15 minutes.
  10. While cooling, slice the remaining cinnamon rolls into thin strips. Arrange these strips decoratively over the warm cheesecake top to create swirls.
  11. Return the cheesecake to the oven and bake for an additional 5 to 7 minutes, just until the roll strips are lightly golden.
  12. Remove from the oven and cool completely on the rack. Then, chill in the refrigerator for at least 4 hours, or preferably overnight.
  13. To make the glaze, whisk together the powdered sugar, milk, and honey until smooth.
  14. Before serving, drizzle the honey glaze over the chilled cheesecake.

Notes

  • For an extra decadent treat, use a full can of refrigerated cinnamon rolls and layer them on the bottom as a crust before adding the batter.
  • If you want a Cinnabon inspired dessert, add a pinch of nutmeg to the cheesecake batter for deeper flavor.
