Ingredients
Scale
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
2 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
For the Swirl: 1/2 cup packed brown sugar
For the Swirl: 1 tablespoon ground cinnamon
For the Swirl: 4 tablespoons unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, and salt. Set this dry mixture aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use a stand mixer or hand mixer for this step.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix only until just combined; do not overmix.
Prepare the cinnamon swirl filling: In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon.
Pour half of the batter into the prepared loaf pan. Drizzle half of the melted butter over the batter, then sprinkle with half of the cinnamon sugar mixture.
Gently spread the remaining batter over the cinnamon layer. Drizzle with the remaining melted butter and sprinkle with the remaining cinnamon sugar mixture. Use a knife to gently swirl the layers together a few times.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For an extra bakery-style finish, you can make a simple glaze using 1 cup powdered sugar mixed with 2-3 tablespoons of milk and drizzle it over the cooled loaf.
This recipe makes a soft and moist bread, similar to the popular Costco Cinnamon Bread copycat versions.
If you enjoy a stronger cinnamon flavor, increase the cinnamon in the batter to 1 1/2 teaspoons.
