Make these zesty cilantro lime steak bowls for a quick, satisfying weeknight dinner. This recipe features tender marinated steak served over bright cilantro lime rice with fresh toppings.

  • 1/2 cup fresh lime juice (about 4 limes)

  • 2 tablespoons lime juice (for rice)
  • 1 tablespoon olive oil (for rice)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen or fresh corn kernels
  • 1 large avocado, sliced
  • Optional toppings: Cotija cheese, sour cream, salsa

Instructions

  1. Prepare the marinade: In a bowl, whisk together 1/2 cup lime juice, 1/4 cup olive oil, 1/2 cup cilantro, minced garlic, cumin, chili powder, salt, and pepper.
  2. Marinate the steak: Place the steak in a resealable bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for best flavor. Do not marinate longer than 4 hours as the acid can toughen the meat.
  3. Cook the steak: Remove the steak from the marinade, letting excess drip off. Grill, pan-sear, or bake the steak over medium-high heat until it reaches your desired doneness (about 4-6 minutes per side for medium-rare).
  4. Rest and slice the steak: Remove the steak from the heat and let it rest on a cutting board for 5-10 minutes before slicing thinly against the grain.
  5. Make the cilantro lime rice: In a medium bowl, combine the cooked white rice, 1/4 cup cilantro, 2 tablespoons lime juice, 1 tablespoon olive oil, and a pinch of salt. Mix well.
  6. Warm the vegetables: Lightly warm the black beans and corn in a small saucepan or microwave.
  7. Assemble the bowls: Divide the cilantro lime rice among four bowls. Top each serving with sliced steak, black beans, corn, and avocado slices.
  8. Add toppings: Finish your healthy steak bowls with your favorite optional toppings like a sprinkle of Cotija cheese or a dollop of sour cream.
