Ingredients

Scale
  • 1 box white cake mix (plus ingredients listed on box)
  • 1 cup boiling water
  • 1 (3 oz) package lime gelatin (Jello)
  • 1 (3 oz) package strawberry or cherry gelatin (Jello)
  • 1 cup cold water, divided
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup boiling water
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 cup cold milk
  • 1 (8 oz) container frozen whipped topping, thawed
  • Red and green sprinkles for decoration

Instructions

  1. Prepare the white cake according to the box directions, using a 9×13 inch baking pan. Bake and let the cake cool completely in the pan.
  2. While the cake cools, prepare the Jello. In a small bowl, dissolve the lime gelatin completely in 1/2 cup of boiling water. Stir in 1/2 cup of cold water. Pour half of this mixture over the cooled cake. Chill until the Jello is set, about 1 hour.
  3. Repeat the Jello process with the strawberry or cherry gelatin. Once set, pour the second half of the lime Jello mixture over the first set layer. Chill until set. Repeat with the strawberry/cherry Jello.
  4. Once both Jello layers are set, use a wooden skewer or the handle of a wooden spoon to poke holes all over the cake surface, about 1 inch apart.
  5. Prepare the sweetened condensed milk soak: In a bowl, whisk together 1 cup of boiling water, the sweetened condensed milk, and the instant vanilla pudding mix until smooth.
  6. Pour this pudding mixture evenly over the poked cake, allowing it to seep into the holes.
  7. Prepare the topping: In a separate bowl, whisk the instant vanilla pudding mix with 1 cup of cold milk until thick. Gently fold the thawed whipped topping into the pudding mixture.
  8. Spread the whipped topping mixture evenly over the Jello and pudding layers.
  9. Decorate the top with red and green sprinkles for a festive look.
  10. Chill the Christmas poke cake for at least 4 hours, or preferably overnight, before slicing and serving. This allows the cake to absorb moisture.
