Ingredients
Scale
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
1/4 cup unsweetened cocoa powder, plus 1/4 cup for sauce
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cold water
1/2 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup packed light brown sugar, for sauce
1 cup boiling water
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
In a large bowl, whisk together the flour, 1 cup granulated sugar, 1/2 cup brown sugar, 1/4 cup cocoa powder, baking soda, and salt.
Add the cold water, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined. Do not overmix.
Pour the batter evenly into the prepared baking pan.
In a separate small bowl, mix the remaining 1/2 cup brown sugar and the remaining 1/4 cup cocoa powder. Sprinkle this mixture evenly over the top of the batter.
Carefully pour 1 cup of boiling water over the top of the batter and sprinkled sugar mixture. The water will seep through.
Bake for 30 to 35 minutes. The cake will look set on top, and the sauce will form underneath.
Let the cake cool slightly for about 10 minutes before serving warm. Serve with vanilla ice cream or whipped cream.
Notes
This dessert is best served warm so the sauce is liquid and gooey.
For an extra rich flavor, consider using a high-quality cocoa powder.
