1 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon peppermint extract
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1 cup crushed peppermint candy canes (plus extra for topping)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla and peppermint extracts.
In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Stir in the semi-sweet chocolate chips, white chocolate chips, and 1 cup of the crushed candy canes.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes. The edges should look set, but the centers will still look slightly soft.
Immediately after removing the cookies from the oven, press a few extra crushed candy cane pieces onto the top of each warm cookie.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

For the best texture, make sure your butter is truly softened, not melted.
