Ingredients
Scale
1.5 lb salmon fillets, skin removed
2 tablespoons olive oil
1/4 cup honey
2 tablespoons lime juice
1 tablespoon adobo sauce from canned chipotles
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
12 small corn or flour tortillas
For Topping: Shredded cabbage, avocado slices, cilantro, lime wedges
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
In a small bowl, whisk together the honey, lime juice, adobo sauce, cumin, salt, and pepper to create the chipotle honey glaze.
Place the salmon fillets on the prepared baking sheet. Brush half of the glaze mixture evenly over the tops of the salmon.
Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork.
While the salmon bakes, warm the tortillas according to package directions (a dry skillet works well for a few seconds per side).
Remove the salmon from the oven and gently flake it into bite-sized pieces using two forks. Toss the flaked salmon lightly with the remaining glaze.
Assemble your tacos: Layer the flaked salmon onto the warm tortillas. Top with shredded cabbage, avocado slices, and fresh cilantro. Serve immediately with lime wedges.
Notes
For an extra smoky flavor, you can grill the salmon instead of baking. Cook over medium heat for about 4-5 minutes per side before glazing.
If you prefer a creamy element, mix 1/4 cup sour cream or Greek yogurt with 1 teaspoon of lime juice for a simple taco sauce.
This recipe makes excellent healthy fish taco ideas for meal prep; store the flaked salmon separately from the tortillas.
