  • 1.5 lb salmon fillets, skin removed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1 tablespoon adobo sauce from canned chipotles
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small corn or flour tortillas
  • For Topping: Shredded cabbage, avocado slices, cilantro, lime wedges

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the honey, lime juice, adobo sauce, cumin, salt, and pepper to create the chipotle honey glaze.
  3. Place the salmon fillets on the prepared baking sheet. Brush half of the glaze mixture evenly over the tops of the salmon.
  4. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork.
