  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 2 tablespoons adobo sauce from canned chipotles in adobo
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with foil for easier cleanup.
  2. Pat the chicken thighs dry with paper towels. Rub them all over with olive oil, salt, and pepper. Place the thighs skin-side up on the prepared baking sheet.
  3. In a small bowl, whisk together the honey, adobo sauce, apple cider vinegar, smoked paprika, and garlic powder to create the glaze.
  4. Brush half of the chipotle honey glaze evenly over the chicken thighs.
  5. Bake for 25 minutes.
  6. Remove the pan from the oven and brush the remaining glaze over the chicken.
  7. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the glaze is sticky and caramelized.
  8. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra crispy skin, switch the oven to broil for the last 1 to 2 minutes, watching closely to prevent burning.
  • If you prefer boneless, skinless thighs, reduce the total cooking time by about 10 minutes.
  • Serve these spicy honey glazed thighs over rice or with a side of roasted broccoli.
