6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup honey
2 tablespoons adobo sauce from canned chipotles in adobo
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with foil for easier cleanup.
Pat the chicken thighs dry with paper towels. Rub them all over with olive oil, salt, and pepper. Place the thighs skin-side up on the prepared baking sheet.
In a small bowl, whisk together the honey, adobo sauce, apple cider vinegar, smoked paprika, and garlic powder to create the glaze.
Brush half of the chipotle honey glaze evenly over the chicken thighs.
Bake for 25 minutes.
