A creamy, restaurant-style chicken enchilada soup with bold flavors and a hint of heat. Perfect for weeknights and easy to reheat.

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 lb chicken breast, cooked and shredded
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) red enchilada sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Stir in shredded chicken, black beans, corn, and enchilada sauce.
  4. Pour in chicken broth and bring to a simmer.
  5. Add heavy cream, cumin, chili powder, and smoked paprika. Stir well.
  6. Simmer for 15-20 minutes until flavors meld.
  7. Season with salt and pepper to taste.
  8. Serve with tortilla strips, cheese, and cilantro.
