Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 cup cooked jasmine rice (for one serving)
  • 1 head of broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the Sticky Sauce:
  • 1/2 cup soy sauce
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • For the Spicy Mayo:
  • 1/4 cup mayonnaise
  • 12 tablespoons sriracha (adjust to your spice preference)
  • 1 teaspoon lime juice

Instructions

  1. Prepare the rice according to package directions. Steam the broccoli florets until tender-crisp, about 5-7 minutes. Set aside.
  2. In a small bowl, whisk together all Sticky Sauce ingredients except the cornstarch slurry.
  3. Heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
  4. Pour the prepared Sticky Sauce over the cooked chicken. Bring the sauce to a simmer.
  5. Stir the cornstarch slurry one last time and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute. Remove from heat.
  6. In a separate small bowl, mix the mayonnaise, sriracha, and lime juice until smooth to create the spicy mayo.
  7. To assemble your flavorful chicken bowls: Divide the cooked rice among serving bowls. Top with the sticky chicken, steamed broccoli, and drizzle generously with the spicy mayo.

Notes

  • For meal prep, store the rice, chicken, and sauce separately from the broccoli and spicy mayo until you are ready to eat. Reheat the chicken and rice, then add fresh toppings.
  • If you want a healthier option, substitute white rice with brown rice or quinoa.
