Make weeknight dinners simple with this creamy chicken noodle casserole. This recipe uses shredded chicken and egg noodles in a rich sauce, finished with a satisfyingly crisp topping. It is a perfect family favorite.

  • 1 pound egg noodles
  • 3 cups cooked, shredded chicken (rotisserie chicken works great)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup crushed butter crackers or panko breadcrumbs
  • 4 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the egg noodles according to package directions until al dente. Drain well and set aside.
  3. In a large bowl, combine the cooked egg noodles, shredded chicken, and frozen mixed vegetables.
  4. In a separate bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, onion powder, and garlic powder until smooth.
  5. Pour the creamy sauce mixture over the noodle and chicken mixture. Stir gently until everything is evenly coated.
  6. Stir in half of the shredded cheddar cheese. Pour the entire mixture into the prepared baking dish.
  7. In a small bowl, mix the crushed butter crackers (or panko) with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake for 20 minutes.
  9. Remove the casserole from the oven and sprinkle the remaining half cup of cheddar cheese over the topping. Bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
  10. Let the casserole rest for 5 minutes before serving. Enjoy this comforting homestyle meal!
