  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Bowls:
  • 2 cups cooked rice or quinoa (for Chicken and Rice Bowl Greek style)
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • For the Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. Combine the chicken pieces with olive oil, lemon juice, oregano, garlic powder, onion powder, salt, and pepper in a bowl. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Prepare the tzatziki sauce: Mix Greek yogurt, squeezed cucumber, minced garlic, dill, lemon juice, and salt in a small bowl. Chill until ready to serve.
  3. Cook the chicken: Heat a large skillet over medium-high heat. Add the marinated chicken in a single layer (work in batches if necessary). Cook for 5-7 minutes per side until fully cooked and slightly browned. This is great for grilling too.
  4. Assemble your Healthy Mediterranean Chicken Bowls: Divide the cooked rice or quinoa among serving bowls.
  5. Top each bowl with portions of the cooked chicken, chopped cucumber, cherry tomatoes, red onion slices, and feta cheese.

Notes

  • For a Low Carb Chicken Bowl option, skip the rice or quinoa and use a base of mixed greens or cauliflower rice.
  • If you do not have fresh dill, use 1/2 teaspoon dried dill in the tzatziki sauce.
  • You can prepare the chicken and sauce a day ahead to make this a very quick weeknight Greek Chicken meal.
