Ingredients
Scale
4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 cup all-purpose flour (optional, for dredging)
4 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
4 ounces cream cheese, cubed
1/2 cup grated Parmesan cheese
5 ounces fresh spinach
1/4 teaspoon red pepper flakes (optional)
Instructions
Season the chicken breasts on both sides with salt, pepper, and garlic powder. If you prefer a slightly thicker sauce, lightly dredge the chicken in flour, shaking off any excess.
Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside on a plate.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 1 minute until fragrant. Do not let it burn.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Stir in the heavy cream and cubed cream cheese. Whisk gently until the cream cheese has melted and the sauce is smooth.
Stir in the grated Parmesan cheese and red pepper flakes, if using. Continue stirring until the sauce thickens slightly.
Add the fresh spinach to the sauce in handfuls, stirring until it wilts down completely into the sauce.
Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken. Let it simmer together for 2-3 minutes to heat through.
Serve immediately. This dish pairs well with pasta or rice, or you can try it alongside a keto meal plan delivery option if you are watching carbs.
Notes
For a tangier sauce, substitute 1/4 cup of the heavy cream with dry white wine, letting it reduce slightly before adding the cream cheese.
If you are looking for a low-carb option, skip the flour dredge and serve this over cauliflower rice instead of traditional sides. This recipe is a great alternative to heavy meal planning when you need something fast.
