Ingredients

Scale
  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 medium yellow onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded (use rotisserie chicken for ease)
  • 2 cups frozen or fresh corn kernels
  • 2 medium potatoes, peeled and diced (about 1.5 cups)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream or half-and-half
  • 1/2 cup shredded sharp cheddar cheese (optional, for topping)
  • 2 tablespoons fresh green onions, sliced (for garnish)

Instructions

  1. Cook the chopped bacon in a large pot or Dutch oven over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave about 1 tablespoon of bacon grease in the pot; discard the rest.
  2. Add the olive oil to the pot with the bacon grease. Add the chopped onion and celery. Cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste. This creates your roux for thickening.
  5. Gradually whisk in the chicken broth until smooth. Bring the mixture to a simmer.
  6. Add the diced potatoes, shredded chicken, corn, thyme, salt, and pepper to the pot. Bring back to a gentle simmer and cook, stirring occasionally, until the potatoes are tender, about 15 to 20 minutes.
  7. Reduce the heat to low. Stir in the heavy cream. Heat through gently for 2 to 3 minutes; do not let the soup boil after adding the cream.
  8. Taste and adjust salt and pepper as needed. This is the moment for that rich and velvety soup texture!
  9. Ladle the **Creamy Chicken Corn Chowder** into bowls. Top each serving with reserved crispy bacon, shredded cheddar cheese, and sliced green onions. Serve immediately for a family favorite soup experience.

Notes

  • For a slow cooker chicken chowder method, combine all ingredients except the cream and cheese in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in the cream and cheese during the last 30 minutes of cooking.
  • If you want a thicker soup, mash about 1/2 cup of the potatoes against the side of the pot before adding the cream.
  • This recipe is great for make ahead chowder; cool completely, store in an airtight container, and reheat gently on the stovetop.
