Make this easy Chicken Caprese Flatbread for a fast, flavorful weeknight dinner or appetizer. It combines grilled chicken, fresh mozzarella, tomatoes, and basil on a crispy crust.

  • 2 pre-made flatbreads (naan or pita work well)
  • 1 cup cooked chicken breast, shredded or diced
  • 1/2 cup pesto sauce (store-bought or homemade)
  • 4 ounces fresh mozzarella cheese, sliced or torn
  • 1 large tomato, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Balsamic glaze, for drizzling (optional)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Lightly brush the edges of the flatbreads with olive oil and sprinkle with dried oregano.
  2. Spread an even layer of pesto sauce over the surface of each flatbread, leaving a small border for the crust.
  3. Distribute the cooked chicken evenly over the pesto layer on both flatbreads.
  4. Arrange the slices of fresh mozzarella and tomato over the chicken.
  5. Place the flatbreads directly on the oven rack or on a baking sheet. Bake for 10 to 14 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Remove from the oven. Immediately scatter the fresh basil leaves over the hot flatbreads.
