1 pound rotini or farfalle pasta
2 cups cooked, shredded, or cubed chicken breast
4 cups chopped romaine lettuce
1/2 cup grated Parmesan cheese
1/4 cup homemade or store-bought Caesar dressing (creamy style)
2 tablespoons mayonnaise (optional, for extra creaminess)
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1/4 cup crunchy garlic breadcrumbs or croutons (for topping)
Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop the cooking process and cool it down. Set aside.
If you are cooking chicken fresh, season it with salt and pepper, then cook it using your preferred method (baking or pan-frying with olive oil) until done. Shred or cube the chicken once cooled slightly.
Prepare the creamy Caesar dressing: In a small bowl, whisk together the Caesar dressing, mayonnaise (if using), lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce until smooth.
In a large bowl, combine the cooled pasta, cooked chicken, and chopped romaine lettuce.
Pour the dressing mixture over the pasta and chicken. Toss everything gently until the pasta and other ingredients are evenly coated.
