  • 1.5 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning (or mix of chili powder, cumin, paprika, oregano)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked white or brown rice (or cauliflower rice for low carb)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen or canned corn, drained
  • 1 cup salsa or pico de gallo
  • ½ cup chopped fresh cilantro
  • Juice of 1 lime
  • Optional Toppings: Shredded cheese, sour cream or Greek yogurt, avocado slices, shredded lettuce, hot sauce

Instructions

  1. Prepare the chicken: Cut chicken breasts into 1-inch cubes. In a medium bowl, toss the chicken with olive oil, taco seasoning, garlic powder, salt, and pepper until fully coated.
  2. Cook the chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. If you prefer shredded chicken, cook until done, then shred with two forks directly in the pan.
  3. Prepare the rice and beans: While the chicken cooks, prepare your rice according to package directions. In a small saucepan, combine the rinsed black beans and corn. Heat over medium heat for 3-4 minutes until warmed through.
  4. Make the cilantro-lime flavor: In a small bowl, mix the chopped cilantro with the fresh lime juice.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Top each serving evenly with the seasoned chicken, the warm black bean and corn mixture, and salsa or pico de gallo.
  6. Finish and serve: Add your favorite optional toppings like cheese, avocado, or Greek yogurt. Sprinkle with the cilantro-lime mixture. Serve immediately or cover tightly for meal prep.

  • For a Chipotle copycat bowl, use white rice mixed with lime juice and cilantro, and use a smoky chipotle seasoning blend on your chicken.
  • Make this a high protein chicken bowl by increasing the amount of chicken or adding extra black beans.
