  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and nearly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the trimmed green beans to the same skillet. Cook, stirring occasionally, until they are bright green and slightly tender-crisp, about 4 minutes.
  4. Add the minced garlic and grated ginger to the skillet with the green beans. Cook for 1 minute until fragrant.
