  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Gruyère cheese (or sharp cheddar)
  • 2 pounds Russet potatoes, peeled and quartered
  • 1/2 cup milk, warmed
  • 4 tablespoons butter, softened
  • 1/2 teaspoon salt (for potatoes)
  • 1/4 teaspoon black pepper (for potatoes)
  • 1/4 cup grated Parmesan cheese (for potatoes)

Instructions

  1. Prepare the mashed potatoes: Place potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.
  2. Mash the potatoes with the warmed milk, softened butter, salt, pepper, and Parmesan cheese until smooth and creamy. Keep warm.
  3. Prepare the chicken: Season chicken breasts with salt and pepper. Lightly dredge each breast in flour, shaking off excess.
  4. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove chicken and set aside on a plate.
  5. Make the garlic gravy: Reduce heat to medium. Add 2 tablespoons of butter to the same skillet. Add minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  6. Whisk in 1/4 cup of the remaining flour from dredging the chicken into the skillet to form a roux. Cook for 1 minute.
  7. Slowly whisk in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until the gravy starts to thicken slightly.
  8. Stir in the heavy cream and bring back to a gentle simmer. Cook for 2 minutes until the gravy coats the back of a spoon.
  9. Remove the gravy from the heat. Stir in the Gruyère cheese until melted and smooth. Taste and adjust seasoning if needed. This creates a rich gravy recipe for chicken.
  10. To serve, place a portion of the cheesy mashed potatoes on each plate. Top with a pan-seared chicken breast and generously spoon the creamy garlic gravy over the top.

Notes

  • For extra flavor in your potatoes, use roasted garlic instead of fresh minced garlic in the mash.
  • If your gravy is too thin, mix 1 teaspoon of cornstarch with 2 teaspoons of cold water and whisk into the simmering gravy until it thickens to your liking.
