  • 1 tablespoon sweetener (maple syrup or honey, adjust to taste)
  • 1/2 teaspoon vanilla extract (for vanilla version)
  • 1 tablespoon unsweetened cocoa powder (for chocolate version)

Instructions

  1. Combine the chia seeds and milk in a jar or bowl. Whisk well for about one minute to prevent clumping.
  2. Add your sweetener and vanilla extract (if making vanilla). If making chocolate chia pudding, whisk in the cocoa powder until fully dissolved.
  3. Let the mixture sit on the counter for 5 minutes, then whisk again thoroughly. This second whisk is key for a creamy chia pudding texture.
  4. Cover the container and refrigerate for at least 4 hours, or preferably overnight, to allow the seeds to fully absorb the liquid.
  5. Check the consistency before serving. If it is too thick, stir in a splash more milk. If it is too thin, let it sit longer.
  6. Serve your overnight chia seed pudding cold with your favorite toppings.
