1 box (15.25 ounces) yellow cake mix
2 cans (20 ounces each) crushed pineapple in juice, undrained
1 can (21 ounces) cherry pie filling
1 cup (2 sticks) unsalted butter, melted
1/2 cup chopped pecans (optional, for topping)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Spread the two cans of crushed pineapple, including all the juice, evenly across the bottom of the prepared baking dish.
Spoon the entire can of cherry pie filling over the pineapple layer. Do not mix the fruit layers.
Sprinkle the dry yellow cake mix evenly over the fruit layers.
Pour the melted butter over the dry cake mix, covering as much of the surface as possible.
If using, sprinkle the chopped pecans over the top.
Bake for 45 to 55 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.
Let the cake cool slightly before serving. This is a great summer potluck dessert.
