Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp instant coffee granules
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup dried cherries
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, cocoa powder, coffee granules, baking soda, and salt.
  3. In another bowl, cream butter, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla.
  4. Gradually mix dry ingredients into wet ingredients. Fold in cherries and chocolate chips.
  5. Drop dough by tablespoons onto the baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes until edges are set. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Use high-quality chocolate for better flavor.
  • For extra chewiness, slightly underbake the cookies.
  • Store in an airtight container to keep them fresh.
