A simple one-pan casserole with layers of potatoes, ground beef, and melted cheese, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 can condensed cream of mushroom soup (or homemade sauce)
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef with onions in a skillet, then drain excess fat.
  3. Layer half the potato slices in a greased 9×13-inch baking dish.
  4. Spread the beef mixture over the potatoes.
  5. Pour condensed soup (or homemade sauce) evenly over the beef.
  6. Top with remaining potato slices and sprinkle cheese on top.
  7. Bake for 45-50 minutes until potatoes are tender and cheese is bubbly.

Notes

  • For extra flavor, add a pinch of thyme or rosemary.
  • Make ahead by assembling the casserole and refrigerating overnight before baking.
