A quick and crispy chicken quesadilla made with rotisserie chicken, perfect for a budget-friendly family dinner.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shredded chicken, bell peppers, cumin, and paprika. Cook for 3 minutes.
  3. Place a tortilla in the skillet. Sprinkle half with cheese, add chicken mixture, then top with more cheese.
  4. Fold the tortilla in half. Cook until golden and crispy, about 2 minutes per side.
  5. Repeat for remaining tortillas. Slice and serve with your favorite dips.

Notes

  • Use leftover chicken for an even quicker meal.
  • Serve with salsa, sour cream, or guacamole.
