A hearty, cheesy soup perfect for chilly nights, with options for stovetop or slow cooker.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced
  • 4 cups chicken broth
  • 2 cups milk
  • 2 cups cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1 tsp mustard
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. Reduce heat to low. Stir in milk, cheese, sour cream, mustard, and Worcestershire sauce until cheese melts.
  5. Season with salt and pepper. Serve hot.

Notes

  • For a slow cooker version, brown beef first, then add all ingredients except cheese and sour cream. Cook on low for 6-8 hours. Stir in cheese and sour cream before serving.
  • Freeze without dairy ingredients for best texture.
