1 pound boneless, skinless chicken breast, cut into bite-sized pieces
2 cups riced cauliflower (fresh or frozen)
1 cup mixed frozen vegetables (peas, carrots, corn—optional for strict keto)
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 large eggs, lightly beaten
3 tablespoons soy sauce or tamari (for gluten-free)
1 teaspoon sesame oil
1/2 teaspoon black pepper
2 green onions, sliced, for garnish
Instructions
Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Add the minced garlic and grated ginger to the skillet. Cook for 30 seconds until fragrant.
Add the riced cauliflower and frozen vegetables (if using) to the skillet. Stir frequently and cook for 5-7 minutes until the cauliflower softens slightly and any moisture evaporates.
Push the cauliflower mixture to one side of the skillet. Pour the beaten eggs onto the empty side. Scramble the eggs until just set, then mix them into the cauliflower.
Return the cooked chicken to the skillet. Pour the soy sauce and sesame oil over everything. Stir well to combine and heat through for 1 minute.
Season with black pepper. Taste and add more soy sauce if needed.
