  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 3 cups grated carrots
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour two 9-inch cake pans.
  2. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Beat oil, granulated sugar, brown sugar, eggs, and vanilla in another bowl until smooth.
  4. Gradually mix dry ingredients into wet ingredients.
  5. Fold in carrots, pineapple, and walnuts.
  6. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes, then transfer to a wire rack.
  8. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, then beat until creamy.
  9. Frost cooled cake layers and serve.
