1/2 cup buffalo wing sauce
4 ounces cream cheese, softened
1 cup shredded cheddar or Monterey Jack cheese
12 small corn tortillas
1 tablespoon vegetable oil or cooking spray
Instructions
In a medium bowl, mix the shredded chicken, buffalo wing sauce, and softened cream cheese until fully combined.
Stir in the shredded cheese until evenly distributed throughout the chicken mixture.
Warm the corn tortillas in the microwave for 20-30 seconds to make them pliable.
Spoon about 2 tablespoons of the filling down the center of each warm tortilla.
Roll the tortillas tightly to form taquitos. Secure with a toothpick if necessary, though a tight roll usually holds.
Lightly brush or spray the outside of the taquitos with vegetable oil.
Place the taquitos in a single layer in your air fryer basket. Work in batches if needed.
Air fry at 375°F (190°C) for 8 to 10 minutes, flipping halfway through, until golden brown and crispy.
Remove toothpicks before serving. Serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, you can lightly spray the taquitos again halfway through the air frying time.
If you do not have an air fryer, you can bake these at 400°F (200°C) for 15-20 minutes, flipping halfway.
