Make these easy buffalo chicken quesadillas for a quick, cheesy dinner packed with bold buffalo flavor. They are perfect for busy weeknights or game day gatherings and use leftover or rotisserie chicken well. You get crispy tortillas and gooey cheese every time.

  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 1/2 cup buffalo wing sauce
  • 4 ounces cream cheese, softened
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 4 large flour tortillas
  • 2 tablespoons butter or oil for cooking
  • For Serving: Ranch or Blue Cheese Dressing, celery sticks

Instructions

  1. In a medium bowl, combine the shredded chicken and buffalo wing sauce. Mix well until the chicken is fully coated.
  2. In a separate small bowl, mix the softened cream cheese with half of the shredded cheese until just combined. This adds extra creaminess.
  3. Spread the cream cheese mixture evenly over one half of each tortilla.
  4. Top the cream cheese side with the buffalo chicken mixture, spreading it lightly. Sprinkle the remaining shredded cheese over the chicken.
  5. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  6. Heat a large skillet or griddle over medium heat. Melt about 1/2 tablespoon of butter or oil in the skillet.
  7. Place one or two quesadillas in the hot skillet. Cook for 3 to 4 minutes per side, pressing down gently with a spatula until the tortilla is golden brown and crispy and the cheese is fully melted.
  8. Remove from the skillet, slice into wedges, and serve immediately with your favorite Ranch or Blue Cheese Dressing and celery sticks.

Notes

  • For extra crispy tortillas, brush the outside lightly with melted butter before placing them in the pan.
  • If you prefer a stronger blue cheese flavor, mix 2 tablespoons of crumbled blue cheese into the filling.
  • This recipe is a fantastic way to use leftover buffalo chicken dip; just omit the separate buffalo sauce step and mix the dip directly with the chicken.
