Make this sweet breakfast bake, a fun weekend breakfast featuring soft, pull-apart dough loaded with blueberries and topped with a bright lemon glaze.

Ingredients

Scale
  • 2 cans (16.3 ounces each) refrigerated biscuit dough, cut into quarters
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup fresh or frozen blueberries
  • 4 ounces cream cheese, cut into small cubes
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F. Grease a 10-cup bundt pan well.
  2. In a large bowl, mix the 1 cup of granulated sugar and cinnamon. Set aside.
  3. In a separate medium bowl, whisk together the flour and brown sugar.
  4. Toss the quartered biscuit pieces first in the cinnamon sugar mixture until coated.
  5. In a small bowl, melt the butter.
  6. Dip each coated biscuit piece into the melted butter, then dredge it lightly in the flour and brown sugar mixture.
  7. Arrange the coated biscuit pieces randomly in the prepared bundt pan.
  8. Sprinkle the blueberries evenly over the dough pieces. Distribute the small cubes of cream cheese throughout the pan.
  9. Pour the remaining melted butter over the dough.
  10. Bake for 35 to 40 minutes, or until the top is golden brown and the center is cooked through.
  11. While the bread bakes, prepare the glaze: Whisk together the 1/2 cup granulated sugar, heavy cream, and vanilla extract until smooth.
  12. Let the monkey bread cool in the pan for 10 minutes. Invert it onto a serving plate.
  13. Drizzle the lemon glaze over the warm bread before serving.

Notes

  • For an extra gooey texture, use frozen blueberries without thawing them first.
  • If you prefer a thicker glaze, reduce the heavy cream slightly.
  • This recipe works well using canned biscuit monkey bread dough for a quick preparation.
