  • 1 cup mashed sweet potato (about 1 large baked sweet potato)
  • 1/2 cup warm milk (about 105-115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon melted butter (for brushing after baking)

Instructions

  1. Combine the warm milk and yeast in a small bowl. Let it sit for 5 to 10 minutes until foamy. This activates the yeast.
  2. In a large mixing bowl, combine the mashed sweet potato, sugar, softened butter, and salt. Mix until smooth.
  3. Add the activated yeast mixture and the egg to the sweet potato mixture. Mix well.
  4. Gradually add the flour, one cup at a time, mixing on low speed with a stand mixer or by hand until a soft, slightly sticky dough forms.
  5. Knead the dough on a lightly floured surface for about 8 to 10 minutes until it is smooth and elastic. The dough should pass the windowpane test.
  6. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  7. Gently punch down the risen dough. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball.
  8. Place the dough balls into a greased 9×13 inch baking pan, leaving a little space between them for spreading.
  9. Cover the pan loosely and let the rolls rise again in a warm spot for 30 to 45 minutes, or until puffy.
  10. Preheat your oven to 375°F (190°C).
  11. Brush the tops of the rolls lightly with the beaten egg wash.
  12. Bake for 15 to 20 minutes, or until the tops are golden brown.
  13. Immediately after removing the rolls from the oven, brush the tops generously with melted butter.
  14. Serve these tender dinner rolls warm.

  • For the best results, use sweet potato puree that has cooled completely before mixing it with the yeast.
  • If you want make ahead dinner rolls, you can refrigerate the shaped rolls for up to 12 hours before the second rise and baking. Add 5-10 minutes to the baking time if baking directly from the refrigerator.
