  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon mirin (or substitute with 1 teaspoon white wine vinegar mixed with 1 tablespoon water)
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Combine the soy sauce, water, brown sugar, mirin, grated ginger, and minced garlic in a small saucepan.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring until the sugar dissolves completely.
  3. Once simmering, slowly whisk in the cornstarch slurry.
  4. Continue to cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 1 to 2 minutes. This is your simple soy glaze.
  5. Remove the sauce from the heat. It will thicken slightly more as it cools.
  6. Use immediately as a sauce or allow it to cool completely before using it as a quick teriyaki marinade.
