1 large egg
1/2 cup milk (dairy or non-dairy)

1/2 cup mix-ins (optional: chocolate chips or chopped walnuts)
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, rolled oats, baking soda, baking powder, salt, and cinnamon. This is your dry mixture.
In a separate medium bowl, mash the ripe bananas well. Add the brown sugar, melted butter, egg, milk, and vanilla extract. Whisk until just combined.
Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold everything together until just combined. Do not overmix; a few streaks of flour are okay.
If using, fold in your chocolate chips or nuts now.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the best flavor and moisture, use bananas that are heavily spotted or almost black.
These muffins freeze well. Cool them completely, then store them in an airtight container or freezer bag for up to 3 months.
