Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1 1/2 cups mashed very ripe bananas (about 3 medium)
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips (optional, for swirl)
Instructions
Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until just combined. Do not overmix.
In a separate medium bowl, whisk together the flour, cocoa powder, and baking soda.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just incorporated. A few streaks of flour are fine.
Fold in the chocolate chips, if using.
Spread the batter evenly into the prepared baking pan. If you want a chocolate swirl, drop small spoonfuls of extra chocolate chips or melted chocolate on top and gently swirl with a knife.
Bake for 30 to 35 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter. This ensures you get that fudgy texture.
Let the brownies cool completely in the pan on a wire rack before cutting into squares.
Prepare the optional Brown Butter Frosting: Brown 1/2 cup of butter until nutty smelling, cool slightly, then whisk with 2 cups powdered sugar, 1/4 cup milk, and 1/2 teaspoon vanilla until smooth. Drizzle or spread over cooled brownies.
Notes
Use very ripe, spotted bananas for the best moisture and flavor in your banana bread brownies.
For a richer flavor, consider adding 1/2 teaspoon of cinnamon to the dry ingredients.
If you skip the frosting, these fudgy banana bread bars are still delicious on their own.
