2 lbs Yukon Gold potatoes, quartered
1 (7 oz) block feta cheese, drained
1/4 cup olive oil
2 tablespoons fresh lemon juice
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the quartered potatoes with half of the olive oil, half of the lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Spread the seasoned potatoes in a single layer on a large baking sheet.
Place the block of feta cheese in the center of the potatoes on the baking sheet. Drizzle the remaining olive oil and lemon juice over the feta.
Bake for 30 minutes.
Remove the pan from the oven. Use a fork to gently break up the feta cheese, allowing it to mix with the potatoes and create a creamy sauce. Gently toss the potatoes with the melted feta.
Return the pan to the oven and bake for another 10 to 15 minutes, or until the potatoes are tender and slightly golden brown.
Garnish with fresh chopped parsley before serving.
Notes
For extra crispy potatoes, increase the oven temperature to 425°F (220°C) for the last 10 minutes of cooking, watching carefully to prevent burning.
