12 pitted Medjool dates
4 ounces soft goat cheese (chèvre)
6 slices thin-cut bacon, halved lengthwise
1 tablespoon maple syrup
Pinch of black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Carefully slice each date lengthwise, leaving the bottom intact, to create a pocket.
Stuff each date with about 1 teaspoon of goat cheese. Gently press the date closed around the cheese.
Wrap one half-slice of bacon around the center of each stuffed date, securing the cheese inside. You may need a toothpick if the bacon does not stay put, but try to avoid them if possible.
Place the wrapped dates seam-side down on the prepared baking sheet.
Brush the tops of the bacon lightly with maple syrup and sprinkle with black pepper.
Bake for 15 to 20 minutes, turning halfway through, until the bacon is crisp and golden brown. Watch carefully to prevent burning.
Remove from the oven and let cool on the pan for 5 minutes before serving. These are great party finger food.
Notes
For extra crispy bacon, you can finish these under the broiler for the last 1-2 minutes, watching constantly.
If you prefer a smokier flavor, use applewood smoked bacon.
