1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup unsweetened applesauce
2 1/4 cups all-purpose flour
1 teaspoon baking soda

1/2 teaspoon ground nutmeg
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy.
Beat in the egg and vanilla extract until just combined.
Stir in the applesauce until fully incorporated.
In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers should still look soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For an even more flavorful cookie, use browned butter instead of softened butter.
If you want a chewier texture, slightly reduce the flour by 2 tablespoons.
