Instructions

  1. Prepare the apple filling: In a small saucepan, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and water. Cook over medium heat, stirring occasionally, until the apples soften and the mixture thickens into a jam-like consistency, about 8-10 minutes. Remove from heat and let cool completely.
  2. Make the cookie dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour and baking powder and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.
  4. Chill the dough for at least 30 minutes. This makes rolling easier.
  5. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
