Instructions

  1. Combine the diced apple, flour, granulated sugar, baking powder, cinnamon, and salt in a medium bowl. Mix well.
  2. In a separate small bowl, whisk together the egg, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Stir just until combined; do not overmix. A few lumps are fine.
  4. Pour vegetable oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2 inches. Heat the oil to 350°F (175°C). Use a thermometer to check the temperature.
  5. Carefully drop the batter by rounded teaspoons into the hot oil, working in small batches to avoid crowding the pot.
  6. Fry for 2 to 3 minutes per side, turning once, until the fritter bites are golden brown and cooked through.
  7. Remove the fritter bites with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
