  • 2 cups water or milk (dairy or non-dairy)
  • 1 large apple, peeled and diced
  • 1 tablespoon butter or coconut oil
  • 2 tablespoons brown sugar (or maple syrup)
  • 1 teaspoon ground cinnamon, divided
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans, toasted (optional topping)
  • Maple syrup for drizzling (optional topping)

Instructions

  1. Prepare the apples: In a small skillet over medium heat, melt the butter or coconut oil. Add the diced apple, 1 tablespoon of brown sugar, and 1/2 teaspoon of cinnamon. Cook for 5 to 7 minutes, stirring occasionally, until the apples are tender and slightly caramelized. Set aside.
  2. Cook the oatmeal: In a medium saucepan, combine the rolled oats, water or milk, salt, and the remaining 1/2 teaspoon of cinnamon. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to low and simmer, stirring frequently, for 5 to 7 minutes, or until the oatmeal reaches your desired creamy consistency.
  4. Remove the saucepan from the heat. Stir in the remaining 1 tablespoon of brown sugar.
  5. Serve immediately. Divide the oatmeal into bowls and top each serving generously with the sautéed cinnamon apples and toasted pecans, if using. Drizzle with extra maple syrup if you like a sweeter breakfast.
