Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup applesauce
  • 1/2 cup sour cream
  • 3 cups peeled, cored, and chopped apples (about 3 medium apples)
  • 1/2 cup chopped walnuts (optional)
  • For the Brown Sugar Glaze:
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan well.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set the dry ingredients aside.
  3. In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy. This step helps create a moist apple bundt cake.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a small bowl, mix the applesauce and sour cream together. Add this mixture to the butter mixture, alternating with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Gently fold in the chopped apples and walnuts, if using.
  7. Spoon the batter evenly into the prepared Bundt pan.
  8. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan on a wire rack for 15 minutes before inverting it onto the rack to cool completely.
  10. Prepare the Brown Sugar Glaze: In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and milk. Bring the mixture to a boil, stirring constantly, and let it boil for exactly one minute. Remove from heat.
  11. Whisk in the powdered sugar and vanilla extract until smooth. The glaze will thicken as it cools slightly.
  12. Drizzle the warm brown sugar glaze generously over the cooled apple cake. Allow the glaze to set before slicing and serving this classic apple cake baking treat.

Notes

  • For the best results and the most tender apple chunks, use firm, slightly tart apples like Granny Smith or Honeycrisp.
  • You can make this cake ahead of time; it stays moist for several days when stored covered at room temperature.
  • If you want a stronger spice flavor, increase the cinnamon to 1 1/2 teaspoons.
