Make these simple, copycat candy bar truffles at home! These no-bake treats feature a creamy coconut center, a whole almond, and a rich chocolate coating. They are perfect for quick desserts or holiday gifting.

Ingredients

Scale
  • 2 cups unsweetened shredded coconut
  • 1/2 cup almond butter
  • 3 tablespoons maple syrup
  • 1 cup dark chocolate chips
  • 40 whole almonds (for topping)

Instructions

  1. In a medium bowl, combine the shredded coconut, almond butter, and maple syrup. Mix well until you form a sticky, uniform dough.
  2. Roll the coconut mixture into small balls, about 1 inch in diameter. Press one whole almond gently into the top center of each ball.
  3. Place the formed coconut balls onto a baking sheet lined with parchment paper. Freeze for 30 minutes until firm.
  4. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each frozen coconut ball into the melted chocolate, ensuring it is fully coated. You can use a fork to help lift and drain excess chocolate.
  6. Return the coated truffles to the parchment-lined sheet. If the chocolate sets before you finish, briefly reheat it.
  7. Refrigerate the Almond Joy Truffles for at least 1 hour, or until the chocolate coating is completely firm before serving.

Notes

  • For a richer flavor, use semi-sweet or dark chocolate.
  • If the coconut mixture seems too dry, add 1 teaspoon of coconut oil to help bind it.
  • These homemade coconut almond bites freeze well for future enjoyment.
