  • 1 cup cooked, crumbled bacon
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely diced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tablespoons apple cider vinegar
  • 1/4 cup chopped fresh green onions, for garnish

Instructions

  1. If using frozen corn, thaw it completely. If you want a deeper flavor, you can lightly char the corn in a dry skillet over medium-high heat until kernels are slightly browned. Let the corn cool.
  2. In a large bowl, whisk together the mayonnaise, sour cream, ranch seasoning mix, and apple cider vinegar until the dressing is smooth.
  3. Add the cooled corn, crumbled bacon, and shredded cheddar cheese to the dressing. Gently fold all ingredients together until everything is evenly coated.
