Copycat shortbread cookies with caramel and chocolate shell, perfect for cookie exchanges.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup caramel sauce
  • 1 cup semi-sweet chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream butter and sugar until light and fluffy.
  3. Mix in flour and salt until a dough forms.
  4. Press dough into a rectangle on the baking sheet, about 1/4-inch thick.
  5. Bake for 15-18 minutes until edges are golden. Let cool completely.
  6. Spread caramel sauce evenly over the cooled shortbread.
  7. Melt chocolate chips with coconut oil and pour over caramel layer.
  8. Let set at room temperature or refrigerate until firm. Slice into bars.

Notes

  • Use a sharp knife for clean slices.
  • Chill the caramel layer before adding chocolate for easier handling.
