Thai Coconut Shrimp Curry

  • 1 lb shrimp, peeled and deveined
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 cup bamboo shoots
  • 1/2 cup fresh basil leaves
  • 1 tbsp lime juice
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated

Instructions

  1. Heat oil in a pan over medium heat. Add garlic and ginger, sauté for 1 minute.
  2. Stir in red curry paste and cook for another minute.
  3. Pour in coconut milk, fish sauce, and brown sugar. Mix well.
  4. Add shrimp, bell pepper, and bamboo shoots. Simmer for 5-7 minutes until shrimp is cooked.
  5. Stir in basil and lime juice. Serve hot with rice.

Notes

  • Adjust spice level by adding more or less curry paste.
  • Use fresh coconut milk for the best flavor.
