2 pounds of beef chuck, cut into 1-inch cubes
1 tablespoon vegetable oil
1 large onion, chopped
4 cloves of garlic, minced
1 tablespoon fresh ginger, grated
2 stalks of lemongrass, trimmed and smashed
2–3 Thai bird’s eye chilies, sliced (adjust to taste)
4 cups beef broth (homemade or low-sodium)
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
2 cups of carrots, sliced
1 cup of potatoes, diced
Fresh cilantro, for garnish
Instructions
Marinate the beef by combining it with fish sauce, soy sauce, and brown sugar in a bowl. Let it sit for at least 30 minutes.
In a large pot, heat vegetable oil over medium heat. Sauté chopped onion, minced garlic, and grated ginger until fragrant.
Add the marinated beef cubes to the pot in batches and brown on all sides for about 5-7 minutes.
Add sliced carrots, diced potatoes, and smashed lemongrass to the pot. Pour in the beef broth and bring to a gentle boil.
Reduce the heat to low, cover the pot, and let the stew simmer for about 1.5 to 2 hours, stirring occasionally.
Notes
Use a resealable plastic bag for marinating to save on cleanup.
Feel free to add optional vegetables like bell peppers or mushrooms.
For a vegetarian option, substitute beef with hearty vegetables or tofu.
Let the stew rest for a few minutes after cooking for better flavor.
