Ingredients
Scale
1 (30 oz) bag of frozen hash browns
1 lb ground beef (or turkey for a lighter option)
1 packet taco seasoning (about 1 oz)
1 cup shredded cheddar cheese
1 cup sour cream
1 can (10 oz) diced tomatoes with green chilies, drained
1 small onion, diced
2 cups shredded lettuce (for serving)
1 cup salsa (for serving)
1 can (15 oz) black beans, drained and rinsed (optional)
1 cup corn (frozen or canned, optional)
1 jalapeño, diced (optional)
Fresh cilantro, chopped (optional)
Avocado slices (optional)
Instructions
Preheat the oven to 350°F (175°C).
Prepare the hash browns by pouring them into a large mixing bowl.
In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked, about 5-7 minutes.
Add the diced onion and taco seasoning to the cooked meat, stir, and cook for another 2-3 minutes.
In a large baking dish, layer the hash browns, followed by the meat mixture, and top with shredded cheddar cheese.
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
Let the casserole cool for a few minutes before serving.
Notes
Use high-quality ground beef for better flavor.
Consider adding a mix of cheeses for a more complex flavor profile.
Let the casserole rest for 5-10 minutes before serving for easier slicing.
