1 packet taco seasoning (or homemade if you prefer)
6 large eggs
1 cup milk
2 cups shredded cheese (cheddar or a Mexican blend works great)
1 can (15 oz) black beans, drained and rinsed
1 cup diced tomatoes (fresh or canned)
1 cup diced bell peppers (any color you like)
1 package (8 oz) tortilla chips, crushed

Instructions
Preheat the oven to 350°F (175°C).
Cook the ground beef (or turkey) in a large skillet over medium heat until browned, about 5-7 minutes.
In a large bowl, whisk together the eggs and milk.
