Ingredients

Scale
  • 1 pound ground beef (or turkey for a lighter option)
  • 1 packet taco seasoning (or homemade if you prefer)
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or a Mexican blend works great)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup diced bell peppers (any color you like)
  • 1 package (8 oz) tortilla chips, crushed
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef (or turkey) in a large skillet over medium heat until browned, about 5-7 minutes.
  3. In a large bowl, whisk together the eggs and milk.
  4. In a greased 9×13 inch baking dish, layer crushed tortilla chips, half of the cooked meat, half of the egg mixture, and some cheese. Repeat the layers and finish with cheese on top.
  5. Bake for 30-35 minutes, or until the eggs are set and the cheese is bubbly and golden.

Notes

  • Use fresh produce for enhanced flavors.
  • Feel free to customize with optional add-ons like corn, jalapeños, or avocado.
  • Let the casserole rest for 5-10 minutes before serving for easier slicing.
