2 (8-ounce) ribeye or sirloin steaks
1 pound russet potatoes, cut into fries
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons unsalted butter, softened
1 tablespoon chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon lemon zest
Instructions
Preheat oven to 425°F (220°C). Toss potato fries with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread on a baking sheet and bake for 25-30 minutes, flipping halfway, until crispy.
Mix softened butter, parsley, garlic, and lemon zest in a small bowl. Set aside.
Heat remaining olive oil in a cast-iron skillet over high heat. Season steaks with remaining salt and pepper. Sear for 3-4 minutes per side for medium-rare. Let rest for 5 minutes.
Top steaks with herbed butter and serve with crispy fries. Drizzle pan juices over the steak if desired.
Notes
Use a meat thermometer for perfect doneness: 130°F (54°C) for medium-rare.
For extra crispiness, soak fries in cold water for 30 minutes before baking.
